Soren Srl è un’azienda famigliare che nasce nel 1973 come polo produttivo di impiantistica per il settore alimentare. Inizialmente concentrata sul territorio nazionale, oggi Soren è presente in più di 80 nazioni nel mondo e conta oltre 600 clienti.
Soren vanta un’aera produttiva di 10.000 mq circa a un paio di chilometri di distanza da Milano, nella quale vengono progettati e costruiti tutti i macro-componenti delle linee di produzione, come tank di processo, scambiatori di calore a superficie raschiata, freezer continui, cristallizzatori, pompe rotative, etc.
Nel corso dei decenni, Soren si è specializzata nei processi completamente automatici di produzione alimentare, grazie anche ad un continuo stimolo da parte dei clienti nella ricerca della massima qualità e dell’innovazione tecnologica. Per poter gestire autonomamente l’intera filiera di produzione e l’assistenza post-vendita, Soren ha sviluppato internamente anche la progettazione e la realizzazione delle componenti elettriche e di automazione.
I principali, ma non gli unici, settori di applicazione della tecnologia Soren sono:
• Creme a base acqua pastorizzate per il bakery
• Gelato
• Margarina e shortening
• Creme a base grasso per biscotti e wafer
• Salse, pesti e sughi.
In particolare, Soren è tra i più grandi esperti al mondo riguardo il processo di cristallizzazione, ovvero della transizione da una fase liquida a una fase solida (o semi-solida), di miscele di acqua e grasso in diverse percentuali, tramite l’utilizzo della tecnologia dello scambio di calore a superficie raschiata.
L’utilizzo di questa tecnologia richiede non solo una profonda conoscenza dei materiali costruttivi e dei parametri di processo, ma anche delle formulazioni dei prodotti. Ragione per cui Soren è in grado di fornire ai suoi clienti supporto durante tutta la fase di progettazione di una linea produttiva: a partire dallo studio del layout, fino allo sviluppo delle ricette.
Nel 2023, proprio oggi, Soren compie 50 anni: altri 100 di questi giorni!

Soren Srl was founded in 1973 and it is an engineering and manufacturing company operating in the food processing sector. Initially focused on the national territory, today Soren is present in more than 80 countries worldwide and has over 600 customers.
Soren has a production area of approximately 10,000 square meters a couple of kilometers away from Milan, where all the macro-components of the production lines are designed and built, such as process tanks, scraped surface heat exchangers, continuous freezers, crystallizers, rotary pumps, etc.
Over the last decades, Soren has specialized in fully automatic food production processes, thanks also to a continuous push from customers in the search for the highest quality and technological innovation. In order to be able to autonomously manage the entire production chain and after-sales assistance, Soren has internally developed also the design and construction of the electrical and automation components.
The main, but not only, fields of application of Soren technology are:
• Pasteurized water-based creams for the bakery industry
• Ice-cream
• Margarine and shortenings
• Fat-based creams for biscuits and wafers
• Sauces, pestos and gravies.
More specifically, Soren is one of the biggest experts in the world regarding the crystallization process, which is the transition from a liquid phase to a solid (or semi-solid) phase of mixtures of water and fat in different percentages, through the use of the scraped surface heat transfer technology.
The use of this technology requires not only a deep knowledge of construction materials and process parameters, but also of product formulations. This is why Soren is able to provide its customers with support throughout the design phase of a production line: starting from the study of the layout, all the way to the development of the recipes.
